Ingredients:

4 medium carrots

½ a red onion, finely sliced

2 tablespoons of currants

¼ cup of chopped parsley

Juice of ½ a lemon

1 tablespoon of olive oil

1 teaspoon of honey

1 teaspoon of ground cumin

1 teaspoon of ground cumin

1 teaspoon of ground coriander

Freshly ground black pepper

 

Instructions:

Gently toss together carrot, onion, currants and parsley.

In a jar add the remaining ingredients for the dressing and shake to combine. Dress salad just before serving.
