INGREDIENTS:

1 head of cauliflower
Olive oil
Salt and Pepper

* Any additional spices or ingredients can be added. For example, pistachio’s (as pictured), or onion and garlic, or add diced veggies to make more of a meal.

METHOD:

1. Place cauliflower in food processor and pulse, until it resembles rice.

2. Fry in olive oil until tender.

3. If adding additional ingredients do this as the cauliflower rice is cooking.

Cauliflower rice has gained popularity over the years as a low carb alternative to regular rice. It is also a big hit with the paleo community and those choosing to eat grain free for health reasons. Personally, we just think its a bloody tasty dish!
